Cobolorum by J. Brix
light - cherry - raspberry - cranberry
J Brix adores the variety California has to offer - compelled to make tiny quantities of as many different wines as possible... and, try to add a new grape or style each harvest. They use neutral vessels, native-yeast fermentation, and absolutely nothing else, with the exception of sulfur dioxide as necessary. In keeping with this minimalist approach, they choose not to fine, filter or cold-stabilize our wines. Their motto, in winemaking and life: ONLY LOVE.
Cobolorum means “goblin,” which is the afectionate nickname for the Riesling vines. This is an alive and very bubbly wine! Social media tag: #NaughtyGoblinBubbles
Settle upright until clear, and then chill completely (i.e. overnight) before opening. An additional 20 minutes upright in the freezer or ice bucket should prevent any bubbling out, if you prefer. Natural sediment will rise from the bottom after uncapping, to create the “cloud of delicious."
100% riesling. 19 year-old vines. Ancient beach & diatomaceous earth, chert, limestone soil. Hand-harvested at sunrise. Whole cluster direct press. Spontaneous fermentation. Neutral french oak. Only 220 cases produced.
