The Gerbais family owns 18 hectares, including 10 hectares of Pinot Noir, four of Chardonnay, and a rarity, four hectares of Pinot Blanc planted mainly on Kimmeridgian soils. The vinifications are made with natural yeasts, in stainless steel tanks, the malolactic fermentations completed, the beloved fine lees. No refining, no filtration. No bullshit! The second fermentations carried out with organic yeasts, then the wine rests for about three years on slats. No dosage. No SO2 added to the bet. Just great wines.
50% Pinot Noir, 25% Pinot Blanc, 25% Chardonnay. Average 30 year-old vines. Celles-sur-Ource, Kimmeridgian bedrock soils. Certified sustainable agriculture. Whole cluster. Direct pressing and cold settling. Fermentation with indigenous yeasts in thermoregulated stainless steel tanks. Malolactic fermentation. Unfiltered or pasted. Dosed at 4 g / l with MCR.
